What is Narthangai?
Citron, known as Neeboo in Hindi and Narthangai in Tamil is a big aromatic citrus fruit with a rough exterior and the colour of a lemon. Though a citrus fruit, it has very distinct properties that fall somewhere between orange and lemon, it is not very juicy as most of the inner pulp is dry.
How do you soften Narthangai?
- Wash the narthangai/lime in running water and wipe it dry.
- Transfer the chopped lime to the bowl(preferably ceramic or glass bowl), add the required rock salt and toss it well so that the salt mixes with the lime pieces.
- After a week, the skin will be little soft and the narthangai will be soaked well.
